Buck's garden tomato, chicken and rice dinner

2 cups dried basmati rice
Big bunch of garden fresh tomatoes
3 healthy sized sprigs of garden fresh cilantro
1 onion
some red pepper flakes
1 teaspoon (or so) chopped garlic
a little vegetable oil (Buck prefers canola)
unmeasured amounts of salt and pepper
A pound or so of boneless, skinless chicken tits


Serves 2 hungry hombres. Steam up two big servings of white rice. Preferably basmati, cuz its kickass. Toward the end of the rice steaming, slice up the chicken tits in to cubes, chop the cilantro, peel and cut up the onion, and cut up the tomatoes.
Heat the oil is a decent sized non-stick skillet. Toss in the garlic, onions and chicken. Stir it around until the chicken is nearly done. Then toss in the tomatoes, cilantro and red pepper flakes.
Sniff it. Nice? You done good.
Reduce heat to low, allow juice to squish out of tomatoes. Toss in some ground black pepper and a little bit of salt.

Serve over rice. Salt a bit more to taste.
